      酒造背景

      旭酒造，這個位於山囗縣專門口生產獺祭的公司，於一九四八年成立，由一家小酒廠只生產普通酒，鋭變成今天只生產純米大吟釀「獺祭」的知名酒造，全賴現任會長 - 櫻井博志當年繼承父親家業後，致力改革，推動數據化釀酒技術，由精確機器取代傳統依頼由杜氏 (釀酒師傅) 釀酒的文化，更定下全年釀制目標，有別於傳統日本酒只可於冬季釀制的限制，務求令「獺祭」貨源供應穩定，使消費者可以一年四季都能享用高品質産品。


      會長遠大抱負及堅毅不屈的精神，把酒廠從破產邊緣拯救，由只有4位員工發展到今天超過200人的公司，更成為日本第一間於海外設立生產線的酒廠。與此同時，獺祭也是首間與米芝蓮名廚Joël Robuchon合作於巴黎開設餐廳，可見得獺祭在國際地位超然。
