而今 生酛 赤磐雄町 木桶 火入

創業家族於江戶時代初期從今治遷移至伊賀，並於1818年在連接奈良・京都至伊勢神宮的初瀨街道旁創立酒藏。原為木材商，故屋號為「木屋正」。長年以「高砂」、「鷹一正宗」等酒銘深受當地喜愛，而「而今」之名，則由曾在但馬杜氏門下修業的第六代藏主兼杜氏大西唯克為其親釀之酒所命名。取自曹洞宗開祖道元禪師的禪語：「不執於過去，不迷於未來，唯全力活於當下」。從洗米、製麴等直接接觸米粒的工序，皆堅持手工操作，並以低溫細心發酵。酒質清透明亮，苦韻細緻，果香華麗而甘味爽淨，各要素均衡融合。主要以伊賀產山田錦為核心，每月更迭推出愛山、酒未來、雄町、千本錦、八反錦、五百萬石等不同酒米釀造的系列，令愛好者常飲常新。
